Ingredients
1 1/2 cups sugar
2 cups flour
1/2 tsp. baking powder
1 tsp. baking soda
2 oz. semi-sweet or bitter chocolate
4 eggs
1/4 cup oil
3 cups grated beets
Method
1. Preheat oven to 325F.
2. Grease a 9x9 pan with oil.
3. Mix dry ingredients in a bowl.
4. Melt chocolate slowly in a pot or double boiler.
5. When chocolate is slightly cooled, mix with eggs and oil.
6. Add the mixture to the dish.
7. Bake for about 40 minutes at 325 F.
8. Check for doneness with a fork or toothpick.
